Try It Tuesday!!!

Tomato Soup

I love making soup and eating it. I don't follow recipes for my soups, but just go with what tastes good. BUT...here is a simple, delicious tomato soup recipe, kind of. I don't measure any of the ingredients, so just do what hits the spot for you.


What you need:

Canned tomatoes (crushed or chopped)

Vegetable broth

Onion (chopped)

Celery (chopped)

Olive oil

Salt

Pepper

Basil


What you do:

Heat up some olive oil. Sautee the onions. Add the celery. Salt and pepper to taste. Add some basil. Add your tomatoes and broth (about the same amount of each). Simmer. And...you're done! I topped mine with some parm.


Spice things up:

Replace the basil with jalepenos and add some black beans.

Replace the basil with sage and add acorn or butternut squash.

As it's simmering, add a grain or pasta.

Brown some chicken with your onions to make a soup with some protein.

  1. Looks delicious, Ashley. I have great admiration for people who are natural cooks. I don't think I've ever successfully created my own concoction! I'm also enjoying the daily photos of Griffin.
